By having a website template you can do everything on your terms, so if you want your website up in a weekend you can do that or if you want to hit the publish button in 2 weeks that works, too! Now if your answers to my questions above were that you have some flexibility in time, you have a larger budget to spend (roughly 3k-10k) on a custom design, and you already know code or you are willing to pay someone to maintain your website on a monthly basis, then a custom website design seems perfect for your business.
